The selected individual will manage all aspects of our banquet food service operation including the daily operation of the Garde Manger kitchen. Culinary creativity is essential. Culinary degree strongly preferred, but not required. Due to the nature of this segment of our business, the Assistant Banquet Chef must be able to work comfortably with guests, meeting planners, and our in-house operations team (Catering Conference Services) to ensure optimal guest satisfaction. Service all restaurants with regard to employees, food product and planning. ESSENTIAL FUNCTIONS AVERAGE ' OF TIME 80' Assist Banquet Chef with planning and overseeing of day to day banquet culinary operations and give direction to employees. Visually inspect, select and use only the freshest fruits, vegetables, meats, fish, fowl, and other food products of the highest standard in the preparation of items. 10' Assist Banquet Chef with maintaining the food and labor costs as budgeted (or better) with the highest quality and consistent results. 10' Assist Banquet Chef with employee training on a regular basis. Other: Regular attendance in conformance with the standards, which may be established from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment. Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.
