The Holiday Inn / Johnny's Italian Steakhouse of West Chester is seeking a Banquet Sou Chef for its 25,000 square feet of event space. Principal Function: Supervision, organization, preparation and presentation of food for banquets and special events. The Banquet Sous Chef (Conductor) oversees the food service of banquet events from start to finish inspecting all food products to be served to ensure they all meet the quality standards set out by departmental management. He / she will directly supervise the kitchen stewards, banquet prep cooks and dishwashing staff. He/she also ensures the cleanliness, sanitation and safety in the kitchen, and storage areas while minimizing waste and maximizing cost/production ratio. This role will provide leadership to ensure consistent, high quality standards within the operation. Responsibilities: Oversees banquet food preparation and production Prepares all items according to directions and specifications of Johnny's Italian Steakhouse Maintains and ensures high standards in production of all items Supervision to kitchen stewards, banquet prep cooks and dishwashers Keeps work area clean at all times and maintains proper standards of sanitation Trains staff in proper recipe preparation, sanitation, safety, cleaning and kitchen operating procedures
