Sodexo Universities business segment is seeking an exceptional Catering Manager 3 for East Tennessee State University located in the foothills of the Appalachian Mountains of Northeast Tennessee. The Catering Manager will oversee an innovative, high end catering program for a very high end, high profile client as well as oversee the day to day catering scheduling/technical delivery of campus catering. We are seeking a LEADER who can manage high volume and high profile campus catering at this very fast-paced university - with services which include simple wholesome presentations to very high end productions - all with the focus on each event culminating with ultimate client satisfaction! This Catering Manager 3 will create elegant and sophisticated catering experiences that exceed culinary and service expectations while enhancing client program objectives. This position is responsible for the organization and execution of all catering events, management of the catering team, and will work closely with our talented Executive Chef. This position will be responsible for $850,000 in revenue. Catering includes will include events from simple coffee breaks to buffet and plated meals to high end catering. In addition, suites and athletic lounge catering for the Football Stadium will open in fall of 2017. The ideal candidate will be responsible for the organization and execution of all catering events and have demonstrated knowledge in casual and fine dining, and banquet management as well as strong writing, costing, menu development and pricing skills. Experience with directing catering operations including wait staff, Banquet Catering wait staff, buffet lines and all day break services. Additional skills include experience in high volume activity, employee/staff training, labor management and control systems. The successful candidate: * demonstrates high energy, is highly creative and imaginative, with a discriminatory eye for detail to mentor and train staff for ongoing higher level of service; * has a proven record of extraordinary results in high profile catering events and upholding exceptional service standards; * has strong organizational and trouble shooting skills and will be responsible to evaluate and improve upon existing practices; * has previous successful experience organizing and executing all catering events and ability to train and motivate a large catering staff; * has demonstrated knowledge in casual, fine dining, and banquet management in a very high volume environment Campus, Corporate, Banquet, etc.; * has strong writing, costing, menu development and pricing skills; * Additional skills include experience handling a variety of initiatives to achieve sales goals and guest satisfaction, staff training, labor management and control systems. ** Relocation Assistance IS available with this position! ** Sodexo University Services is committed to enhancing the learning environment on campus through world-class food and facilities services.
