The American Cruise Lines culinary team is expanding its corporate staff. In this position you will be managing chefs onboard our ships, training new hires, and ensuring a product consistent with our standards. You will be traveling around the country often and building menus utilizing local ingredients. We provide a high end experience to a sophisticated clientele. Your primary measure of success is their satisfaction. Maintain high product quality aboard our cruise ships Coach, and mentor shipboard chefs Travel to ships for quality control and continuous training Ensure adherence to company policies including standardized recipes and food safety Build menus using local ingredients NOTE: This position requires frequent travel to company vessels and a flexible schedule. You will need to have comprehensive food knowledge and an expert understanding of dietary restrictions. The Corporate Executive Sous Chef will need to be familiar with local and seasonal ingredients in relation to the location of the vessels.
