SUMMARY: The Director of Catering is a key staff position responsible for the administration, analysis, development and communication needed to service customers and develop revenues. Must be an enthusiastic, aggressive, and results driven, professional individual who possesses the ability and passion for guest service and the catering business. ESSENTIAL DUTIES AND RESPONSIBILITIES include the following: Achieve or exceed all goals as assigned by DOSM/GM/Company. Analyze market segments and customer profiles identifying needs to position hotel for maximum revenue through promotions, client relations and competitive strategy. Respond in a timely manner to incoming group/catering opportunities that are within pre-defined parameters. Identify, solicit & develop new business through obtaining accounts from competition, lateral development of existing accounts and contacting new customers in the market. The solicitation of new and saturation of existing business should be through a combination of appointments, telemarketing, site tours, constant prospecting and networking. Actively up-sell each business opportunity to maximize revenue. Follow up on business opportunities identified by the sales team. Conduct and coordinate tours/site inspections for hotel. Make contact with key event personnel each day with scheduled events in the hotel. Understand the overall market - competitors strengths and weaknesses, economic trends, supply and demand etc. and how to sell against them. Ensure business booked is within hotels parameters. Close the best opportunities for the hotel based on market conditions and the hotel needs. Execute and support the operational aspects of business booked (e.g., generating proposal, writing contract, customer correspondence, thank you letters, rooming list ,billing, and BEOs). Transfer accurate, complete and timely information to appropriate departments in accordance with hotel and brand standards, by conducting event BEO meetings weekly after gathering client details via phone, fax and email. Build and strengthen relationships with existing and new customers, industry organizations and local community to enable future bookings. Collaborate and engage third parties for their individual travel or group planning needs. Understand and actively utilize brand marketing initiative/incentives to close business. Establish clear expectations for customers and hotel(s) throughout the sales process. Execute exemplary customer service to drive customer satisfaction and loyalty by assisting the customer and ensuring their satisfaction before and during their program/event. Maintain accurate and up-to-date customer, account and opportunity data. Partner with Director of Sales to ensure proposed rate negotiations meet hotel's financial objectives. Execute and support customer service and Hilton brand standards.
