Sodexo Campus Services is seeking an Executive Chef 2 at the University of Louisiana Lafayettee, located in Lafayette, LA. Reporting to the Executive Chef 3, the Executive Chef 2 for this large campus will be responsible for $12 million in annual sales with 3,300 student boarders. This business consists of a $8 million award winning board dining operation, $2.5 million in retail food business and $1.5 million in catering. This unit is positioned to be a showcase account for Sodexo. Position will direct a culinary team consisting of production manager & catering chef, up to 6 Sous Chefs and hourly culinary staff. The best qualified candidate will have the following: - High-volume College/University culinary and culinary management experience - Catering culinary program experience - A culinary degree - Experience with food and labor management systems - Experience leading and training a culinary staff - Union experience - Experience with on-line ordering - Excellent management skills with the ability to wear multiple hats - A strong attention to detail and a high focus on food presentation/menu planning -Culinary background to include Louisiana cuisine that reflects the Lafayette culture Position Summary Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position. Qualifications & Requirements Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 2 years Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc. Sodexo is an EEO/AA/Minority/Female/Disability/Veteran employer.
