GENERAL SUMMARY: Under the general direction of the Kitchen Manager, responsible for placing correct cold food and beverage items on patient meal trays, delivering meal carts or requested items to nursing units in a timely and efficient manner, cleaning and sanitizing dishes, pots, kitchen equipment, and kitchen surfaces. Communicates in an effective and courteous manner with all members of the Food Service staff while working in one of the following three roles:



* Checks all items at station for accuracy and adherence to quality assurance minimums before placing on meal trays

* Adds assigned items to meal tray in an accurate, efficient manner

* Able to work all stations on the trayline, as needed

* Rejects any unacceptable food items and requests replacement item

* Replenishes supplies on tray line

* Follows proper food handling techniques according to TJC and DPH

* Ensures the integrity of stored food items on the tray line

* Participates in the Quality Assurance process

* Demonstrates a working knowledge of the Room Service goals for the assembly area

* Performs other duties as requested


* Delivers meals carts or requested items to nursing units in a timely and efficient manner

* Communicates with Room Service Representative prior to leaving cart or tray on the Patient Care Unit

* Loads trays onto meal delivery carts

* Accurately documents time and room number information on Tray Location Log

* Places items on patients meal trays, as needed

* Works position on tray assembly line, as needed

* Delivers nourishments to Room Service Ambassadors on nursing units

* Retrieves soiled meal cart from nursing units

* Cleans food carts, as needed

* Assists with cleaning dishmachine and dishroom

* Works in dishroom scraping, loading and unloading dishmachine, as needed

* Washes pots and pans utilizing appropriate machines to ensure proper cleaning and sanitizing occurs

* Takes ownership of issues and ensures a positive outcome

* Serves as a quality assurance control point for every aspect of the Room Service program

* Assumes the role of a patient advocate

* Performs other duties as requested


* Maintains efficient flow of dishes and carts through the dish room

* Works in dish room, scraping, soaking, loading, and unloading dishes appropriately

* Washes dishes, pots, and pans, utilizing appropriate machines to ensure proper cleaning and sanitizing occurs

* Ensures the safe and proper handling of all food items, soiled items, and clean dishes, according to standards of DPH, TJC and local agencies

* Cleans and sanitizes all food trucks and carts correctly and per cleaning schedule

* Slots trays, stacks dishes, and organizes cookware and flatware appropriately, following procedures to ensure dishes are clean and dry prior to storage or reuse

* Brings clean dishes back to trayline or other storage area

* Maintains dish machine function by changing water, detergent, and rinsing agent properly. Cleans dish machine screens regularly.

* Accurately maintains dish room logs required for regulatory compliance, including completing dish machine temperature log, and following proper procedures when temperatures are out of range

* Empties, cleans, and sanitizes trash and recycling barrels, including cardboard box bins. Disposes of all trash and recycling properly.

* Sweeps and mop floors throughout entire Dietary Kitchen, ensuring cleanliness of floor, including corners and area under tables and kitchen equipment

* Demonstrates understanding of proper procedures to be used when dish and/or pot washing machine is down

* Maintains rotation of soiled tray carts throughout the hospital

* Maintains cleanliness of dish room and pot room, including walls and floors

* Maintains kitchen drains, using proper chemicals

* Cleans kitchen equipment and surfaces, including bain marie, steam tables, steam kettles, etc., efficiently and completely

* Demonstrates proper use of cleaning chemicals within the Dietary Kitchen setting, utilizing appropriate safety measures

* Understand the purpose and use of the MSDS resource

* Conducts deep cleaning tasks within kitchen per cleaning schedule and per department need/supervisor request

* Recognizes urgent cleaning requirements and responds appropriately, in order to maintain a safe environment

* Performs other duties as requested

* High school or vocational school graduate preferred. Alternately, candidates with extensive food service experience may be considered.

* Knowledge of food service kitchens, including standards of safety and cleanliness preferred.

* Demonstrates effective communication skills, including the ability to read and understand English. Must be able to comprehend and take appropriate action quickly.

* Ability to work independently, completing assigned tasks safely and correctly, demonstrating good time management skills.

* Ability to demonstrate excellent customer service skills, ensuring all actions reflect programs service goals.

* Ability to demonstrate commitment to team members and patients through flexibility and strong work ethic.
