Responsible for skilled work in the preparation of meals for regular and modified diets in accordance with menus. Assures that high quality meals are ready on schedule and adjusts quantity to accommodate patient/resident census.
Essential Duties and Responsibilities:
Prepares regular and modified diets according to master production sheets.
Prepares food according to standardized recipes and cooking of menu items which meet acceptable quality standards of taste and temperature at scheduled serving times.
Service of meals to patients and residents are portion controlled for all food items with acceptable appearance to enhance appetite appeal.
Food items are tasted for acceptability and palatability.
Uses substitution form when any deviation from menu occurs.
Utilizes food preparation forms to ensure duties are completed for next day of service.
Documents over or under production and adjusts prep sheets accordingly.
Food is prepared according to acceptable standards to ensure safety of product.
Food temperatures are recorded prior to being placed in tray line and steam table.
Completes sanitation/cleaning checklist appropriately. Completes assigned cleaning duties.
Unloads freight and places in appropriate locations utilizing FIFO method.
Sanitation responsibilities include but not limited to FIFO, hand washing, food storage, food preparation, cleaning method, and food handling.
Safety practices followed to include but not limited to equipment safety, guards, spills cleaned up immediately and chemical usage, gloves and safety glasses used, (appropriate PPE)
and preventing burns.
Ability to operate and clean all kitchen equipment including but not limited to mixer, ovens deep fat fryer, tilting braising pan, steamer, stove, and food processor.
Education, Experience, and Licensure/Certification Requirements: Requirements are representative of minimum level of knowledge, skills, and/or abilities.
1. Must be able to comprehend verbal and written instructions, production sheets, modified diets and equipment operating procedures.
2. Previous food service cooking experience preferred.
