br GENERAL PURPOSE
br Train stewards, verify daily assignments are completed. Ensure sanitation standards and cleanliness in all kitchen areas. Clean and sanitize all areas of the kitchen and operate the dish washing machine in a safe, accident-free manner.
br
br ESSENTIAL DUTIESRESPONSIBILITIES
br Maintain organization and ensure proper rack stacking, silver presoaking and operation of dish machine.
br
br Perform special cleaning projects as assigned.
br
br Train new stewards as required.
br
br Sweep and mop floors. Keep floors clean and dry, pick up wet spills immediately.
br
br Clean walls, tables, racks, sinks, floor mats and disposal area. Polish stainless steel.
br
br Clean ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes and ceiling vents, according to schedule or as specified by chef.
br
br Empty all trash cans over 34 full at end of shift, wash out and return to kitchen.
br
br No travel required.
br
