Job Description
Develop, implement and maintain quality standards for outlets, including supervision and direction of service staff. Ensure excellent customer service.
Interview, select, train, supervise, counsel and discipline restaurant staff for the efficient operation of the outlet. Organize and conduct daily pre-shift and monthly departmental meetings communicating pertinent information to the colleagues. Schedule and direct staff in their work assignments. Train and direct staff in all food beverage operations according to Fairmont Standards. Communicate effectively, both verbally and in writing to provide clear direction to the staff. Assign and instruct beverage staff in details of work. Observe colleague performance and encourage improvement where necessary with effective and consistent performance management.
Interact positively with customers promoting hotel facilities and services. Resolve problems to the satisfaction of involved parties. Answer telephones in a clear voice, coordinate and document reservations. Organize special events in the department such as receptions. Maintain communication with all departments to ensure customer service needs are met. Communicate with guests and employees in a positive and clear manner. Listen to and understand requests, respond with appropriate actions and provide accurate information. Remain calm and alert, especially during emergency situations andor heavy hotel activity, serving as a role model for beverage staff and other hotel employees. Interact with all departments closely to ensure efficient department operations and quality guest service.
Continuously move throughout outlet and kitchen areas to visually monitor and take action to ensure food quality and service standards are met. Verify temperatures, judge appearance and taste of products and check preparation methods to determine quality. Give guidance toward improvement and make necessary adjustments for consistency. Field customer complaints by conducting thorough research of the situation in order to choose the most effective solutions. Make decisions and take actions based on previous experience and good judgment, sometimes revising procedures to accommodate unusual situations.
Utilize prescribed cash handling procedures to accurately charge customers, create forecast and revenue reports and write correspondence.
Schedule staff and allocate product and equipment according to size of function andor house count.
