Four Seasons Hotel San Francisco has 15,000-square feet of sophisticated banquet and meeting space, including a 5,000-square foot terrace overlooking Yerba Buena Gardens. We are actively searching for an experienced and energetic individual to become Banquet Chef (Sous Chef) of Four Seasons Hotel San Francisco! The Role - Overview This vital culinary supervisory role is responsible for planning, organizing, controlling and directing the work of employees who prepare food for banquet functions. Focus areas will include ensuring quality and consistency of all food product. Essential Functions This list is not all inclusive and should only be used as an overview of all actual responsibility. o Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchens food production area to ensure that established cultural and core standards are met. o Daily activities and operational planning. o Assist in the planning and development of menus for the hotel. o Ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration o Check and coordinate details of each banquet function according to banquet event order. o Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control. o Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance, as well as the cleanliness and organization of the kitchen. o Maintain control systems which will assure quality and portion consistency. o Monitor food shipments to ensure they meet established purchasing specifications, as well and foster an awareness of the importance of food preparation and quality. Qualifications & Experience o Previous Banquet Kitchen experience required. o Culinary degree preferred. o Must have minimum of three (3) years of cooking experience in a five star hotel or fine dining restaurant. o Must be able to work as part of team. o Must be able to work a flexible schedule. o Strong ability to prioritize, organize, and manage competing priorities. o Possess well-developed leadership and problem solving skills. o Be able to make quick decisions, work in a fast paced and diverse work environment. o Excellent reading, writing, and oral proficiency in the English language.
