The Sous Chef will be responsible for the overall operations of the day to day kitchen in the resort/casino to ensure quality of service is exceptional. Assist the Executive Chef in maintaining food quality and determining food presentation in all outlets. Ability to share experience and knowledge by training the staff. Maintains discipline and effective communication with Kitchen, Steward and Service staff. Ensures all work stations are properly setup and broken down during each meal period. Assist Executive Chef in conducting inventory. Prepare purchase order requests for food & beverage as needed. Assist in designing, developing and implementing menus and food pricing. Control all operating cost through a variety of record keeping procedures. Maintaining a high standard of the personal hygiene of his staff, inspect uniforms and help coordinate proper equipment sanitation with the Chief Steward. Controlling daily deliveries of fresh goods and proper storage to eliminate waste and spoilage.
