Job SummaryThe Product Development Internship will focus on the following objectives:Gain knowledge and understanding of formulation development of flavors and seasoning blends for use in food products.Gain hands-on experience with application methods using flavors and seasoning blends in food products.Gain experience working as a team member within a new product development group for a large food processing company.Key Disciplines of Focus: Meat and PoultrySnacksSauces and GraviesLow Sodium SolutionsMaillard Reaction FlavorsCompounded FlavorsSensoryManufacturing Processes Core Learnings:Identify spices and ingredients appropriate for use in seasoning blendsIdentify functional ingredients and their uses in seasoning blendsIdentify appropriate levels of ingredients in developing seasoning blendsCompounding seasoning blendsApplications methods for snacks and vegetablesApplications methods for meat and poultry flavor systems (ie: vacuum tumbling, injection, grinding, blending, topical)Preparation methods for sauces, graviesIdentify appropriate ingredients for developing reaction flavorsIdentify and evaluate appropriate levels of ingredients in developing reaction flavorsCompounding reaction flavors and use of a reaction vesselIdentify chemical compounds appropriate for use in natural/artificial flavorsIdentify and evaluate appropriate levels of chemical compounds in developing flavorsCompounding flavors and personal safety in flavor labIdentify and evaluate chemical compounds and ingredients suitable for low sodium solutionsIdentify appropriate sensory methods for evaluation Conduct sensory tests and analysisObservation of manufacturing methods in processing facilityKnowledge, Experience, and Education:Food Science curriculumCompleted coursework in food analysisCompletion of three years of undergraduate coursework strongly preferredAbility to lift up to 60 lbs on a regular basis.Exposure to manufacturing processes and equipment for periodic extended workdays
